Shirred Eggs
A tasty morning treat with ham, eggs, and other good things.
Ingredients
4 thin slices of ham
4 large eggs
1 teaspoon prepared mustard
1/2 cup plain yogurt
1 cup shredded Monterey Jack cheese
3 teaspoons chives
3 teaspoons parsley
Preheat oven to 375 degrees. Grease 4 ramekins or giant muffin tin. Line with ham slices. Beat eggs, mustard and yogurt. Stir in 1/2 of cheese and half of herbs. Stir well and spoon into ramekins. Sprinkle with remaining cheese and herbs. Bake 25 to 30 minutes until set. Turn out onto plates and garnish with herb sprigs. Serve with hot toast.
