Pork Goulash

Pork Goulash (4 servings)

1 tbsp olive oil
2 lbs pork tenderloin, cut into 1" cubes
2 medium onions, chopped
2 large cloves of garlic, chopped
2 tbsps. flour
2 tbsps paprika
1 tsp caraway seeds
1 cup dry white wine
2 tbsps tomato paste
1 medium potato cut into cubes
2 large plum tomatoes chopped or one 14.5 oz can of diced tomatoes drained
4 cup fat free, salt free chicken broth
4 oz yolk free wide noodles
1/4 cup fat-free sour cream

Heat oil in pan and brown the pork. Remove the pork. Add onions and garlic and saute about 6 minutes until golden.
Stir in the flour, paprika and caraway seeds. Cook for 2 minutes. Stir in wine and bring to a boil Add tomato paste, bell
pepper, potato, tomatoes and broth. Return the pork to the pan. Reduce heat and simmer1 hour or in oven at 350.

Season with salt and pepper if desired. Serve over noodles with a dollop of sour cream.
