Shrimp Po' Boy
Fry Mix
6 cups self-rising flour
1 cup cornmeal
salt and pepper
Mix altogether in a bowl and set aside.
The Sandwich
2 lbs. shrimp
salt and pepper
3 eggs
1/4 cup water
1/2 cup hot sauce such as Texas Pete
Sprinkle the shrimp with salt and pepper. Mix the eggs with the water and hot sauce. Dip shrimp into egg mixture, then into fry mix
Fry shrimp about 3-4 minutes at 350 degrees in peanut oil.
Butter and toast some buns. Put lettuce and sliced tomato on roll, top with shrimp and home-made tartar sauce.
Serve with a side of cole slaw.
